THE recipe easy fast and excellent with artichokes!

Jerusalem artichoke soup with curry

Wash artichokes thoroughly by brushing and then cut them into cubes without peeling.
In a pan, sauté with olive oil for 5 minutes over low heat, stirring.
Then add a tablespoon of curry powder and a spoonful of honey to caramelize the artichokes.
Pour chicken broth prepared with a stock cube and bring to boil.
Add 200ml coconut milk and simmer for 30 minutes.
Blend at a blinder to get mellow.
Pepper and salt to taste.

If you do not like coconut milk, you can put the cream.

This recipe is really interesting because it is often long to clean, cook and peel the artichokes before submitting them. It suffices to brush properly.
